When the snack attack hits it is great to have a quick and easy recipe in your back pocket. These almond butter cookies take about 25 minutes from prep to mouth. And it's a great one to get the kids involved with.

Ingredients
150g almond butter
70g sugar (we used coconut palm sugar)
1 flax egg (1tsp milled flax seed 3tbsp water mixed)
1tsp bi carb (baking soda)
Method
Preheat oven to 180c
Mix until all ingredients are well incorporated
Using an ice cream scoop or large spoon, place cookie dough on lined baking sheet
We made pretty decent sized cookies, so we got 9 out of this batch.
Bake for 12-15 minutes, they will firm up and flatten a bit when you take them out of the oven so be careful not to over cook.
Big thanks to my mini baker Frankie, who pretty much made these all by herself! These also freeze well but for some reason they don't ever make it to the freezer at ours 🙊
