Dark Chocolate Cake
220g white spelt flour (any plain/pastry flour will work)
80g cacao powder
2tsp bi carb
1tsp baking powder
150g coconut palm sugar (or unrefined caster sugar)
400ml non dairy milk
2tsp apple cider or white vinegar
2tsp vanilla extract
125ml melted coconut oil/rapeseed oil
1tsp vanilla extract
150g dark chocolate or 80g cacao powder
maple syrup to taste
Preheat oven to 165c, prep 2 - 6inch cake pans (or 1- 8 inch pan for a single layer cake)
Sift together the flour and cacao then add all of the dry ingredients,
make sure they are well combined
In a separate bowl, mix together all of the wet ingredients
make sure to not over mix
pour the mixture into the prepared pans
bake for 20-25 mins
while cake is baking, make the frosting
using a hand mixer/food processor cream the avocado until smooth together until completely smooth,
add in melted chocolate/cacao and vanilla and maple syrup if you would like it sweeter. mix until combined
set in fridge until cake is cooled
once cakes are completely cooled, frost and decorate!
Add sprinkles or chocolate shavings for fun & texture!
