The ultimate veggie nugget made with common everyday ingredients, and a great way to get your kids to eat their veggies.
DD's Veggie Nuggets
1 carton of cannellini beans (380g with the water)
200g gluten free flour (approximately)
20-50g finely chopped broccoli or shredded carrots
1-2 tsp italian herbs (or herbs of choice)
3-4 tbsn nutritional yeast
Toss beans (including the water) into a food processor, blend until smooth.
Add in herbs & nutritional yeast and about 150g flour
Mix until the flour is incorporated, it should be thick and sticky and able to hold its shape
Fold in the veggies
Dust your hands in flour and roll the mix into balls, then flatten.
Place on a plate with a bit of flour on it until you are done with forming all of the nuggets.
Heat vegetable oil in a large pan, then add in a nuggets. (warning they will be delicate going into the pan so be careful) cook approximately 3 minutes on each side or until golden.
Grab some ketchup or mustard and get to dipping!
These are also freezer friendly so ditch the shop bought and prep your own!
