This is our go to breakfast at our house, it's so easy and quick to throw together! Frankie loves to mash the bananas and essentially make batches by herself.
Ingredients:
210 grams rolled oats
125 grams quinoa pops (optional just add more nuts)
10 grams chia seed
10 grams of milled linseed
1/4 teaspoon nutmeg
1 teaspoon of cinnamon
50 grams dessicated coconut or coconut flakes
1 teaspoon vanilla
80 ml of maple syrup
120 ml of coconut oil
1-2 bananas pureed
50 grams of nuts (used walnuts & pecans)
Method:
Preheat oven to 180c degrees
Toss dry ingredients together in bowl, add wet ingredients,and mix throughly
Spread onto a parchment lined baking sheet, bake for 15-20 minutes until dry & crunchy
Let cool completely then enjoy with your plant based milk of choice, it would be amazing as topping for yoghurt, icecream or smoothie bowls. Easy, crunchy and super healthy!
This recipe is also very forgiving, so swap out for your favourite nuts, liquid sweetners, leave out the coconut, add cacao, chocolate chips (after baking of course)
