Due to popular request, here is one of our favourite pancake recipes. Quick and easy, the ultimate way to kick off your day. * Mum Tip* I make extra and keep them in freezer, pop them in toaster for mid week breakfasts on the go.

Ingredients:
200g plain or gluten free flour
30g sugar (or any sweetner of choice)
1tsp bi carb
1/2 baking powder
1 scoop vanilla protein powder (optional)
1tsp cornflour
250ml non dairy milk
1tsp white vinegar
100ml water
50-60g nut butter (I used almond butter)
Combine milk & vinegar and set aside
Mix dry ingredients
add in wet ingredients and nut butter
Heat coconut oil or vegan butter in a hot flat pan
spoon pancake batter onto hot pan
flip when small bubbles start to form
cook until golden on both sides
Serve with your favourite toppings & maple syrup
